Pumpkin Nut Bread

Delicious, moist bread!

Course Dessert

Ingredients

  • 1 1/3 cup flour (white or white whole wheat)
  • 1 1/4 cup sugar, can be reduced to 1 cup
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 2 eggs, slightly beaten
  • 1/2 cup canola oil
  • 1/3 cup water
  • 1 cup canned pumpkin
  • 1/2 cup walnuts, coarsely chopped

Instructions

  1. Preheat oven to 350 degrees. Grease a 9" by 5" baking loaf pan with cooking spray.

  2. Combine flour, sugar, soda, spices, and salt in a large mixing bowl.

  3. Combine eggs, oil, water, pumpkin, and walnuts in a smaller bowl.

  4. Add wet ingredients to dry, pour into loaf pan, and bake until a strand of spaghetti inserted in the loaf comes out clean- about 1 1/4 hours to 1 hour 20 minutes.

  5. Let cool before slicing.
