Pumpkin Nut Bread
Delicious, moist bread!
Ingredients
- 1 1/3 cup flour (white or white whole wheat)
- 1 1/4 cup sugar, can be reduced to 1 cup
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 2 eggs, slightly beaten
- 1/2 cup canola oil
- 1/3 cup water
- 1 cup canned pumpkin
- 1/2 cup walnuts, coarsely chopped
Instructions

Preheat oven to 350 degrees. Grease a 9" by 5" baking loaf pan with cooking spray.

Combine flour, sugar, soda, spices, and salt in a large mixing bowl.

Combine eggs, oil, water, pumpkin, and walnuts in a smaller bowl.

Add wet ingredients to dry, pour into loaf pan, and bake until a strand of spaghetti inserted in the loaf comes out clean- about 1 1/4 hours to 1 hour 20 minutes.

Let cool before slicing.
